Comparative testing of different methods for gluten washing from common winter wheat grain and flour

The aim of this study was to compare and evaluate the efficiency of Bulgarian and foreign
methods for determining gluten quantity in wheat grain and flour and their recommending
for breeding material evaluation. The results showed that the methods for gluten washing
were not only responsible factor reflecting on the quantities obtained, but that different
washing lead to different determining significance of the genotypes. The best alternative
for breeding under the conditions of Bulgaria is offered by the method BSS 754-79, which
has the highest differentation ability among the varieties investigated. In spite of of the
considerable diffrences in the values of the gluten obtained through the studied methods,
a high correlation between most of the results was established. This allows to carry out
similar evaluation of gluten quantity of the varieties and lines using different investigated
methods for its laboratory washing.
